This classic Mexican herb is earthy and pungent, with a flavor all its own. Compared at times to wild oregano, savory, or tarragon, epazote also has citrus or pine resin overtones. It has a practical side, too: it makes beans much more digestible. We love it for all its qualities in black beans and mole, and in classic Mexican dishes like calabacitas.
