This week, Zelda & Bramble are introducing a party pack of three exciting new blends, so we’ve been doing a lot of experimentation, trying them on everything! And now I’m eager to share what we’ve been doing with the brand new Z&B Pizza Shakes! This is a really versatile and flavor-packed blend of herbs and rich and nutty toasted fennel and sesame seeds, brightened with sunny lemon zest and a little kick from red pepper flakes.
It is a perfect fit on pizza, of course, as well as in a pasta sauce, in sautéed veggies layered in lasagna, or over mac & cheese. But my favorite discovery is how good it is on salad!
Don’t worry, I won’t claim that it will turn your leafy greens into an extra cheese and pepperoni pizza, but when I tried it, I was wowed by how much pop it added, and it really brought the fresh, summery flavors of the salad ingredients together. Even if you think that salads are boring, bear with me! We know that they’re healthy (if you hold the heavy dressings), but salads are also super versatile and, if you season them well, delicious! The mouth-watering salads I’ve been making recently have consisted of freshly picked baby lettuce mix from the garden, a handful of chickpeas or other beans, a scoop of quinoa, snap peas or other veggies from the farmers’ market, a drizzle of flax oil, a splash of apple cider vinegar, and a generous sprinkle of Z&B Pizza Shakes!
The chickpeas and quinoa are full of protein, fiber, B vitamins, iron, and other nutrients, and help make this a substantial salad that fills you up. Quinoa is one of the healthiest and quickest-cooking grains; just simmer 1 cup quinoa in 2 cups water or vegetable stock for 12 minutes and add a pinch of salt. You can also sprout it instead if you’re so inclined.
The salad greens and other veggies you add on top are low-calorie and vitamin-packed. And it’s fun to mix them up based on what is in season and what you have on hand. I can’t wait for tomatoes to be in season; I know they’ll be awesome on this salad!
Apple cider vinegar has been the subject of lots of hype, and while many of the touted “miracle cures” are unproven, there is evidence that it can help with weight loss and balancing blood sugar levels, and it contains antioxidants, which can help protect the body from disease.
Flax oil is a healthy fat and great source of omega-3 fatty acids, which are beneficial to the heart and brain and reduce inflammation, among other health benefits. It’s best on salads, as it breaks down if heated. Keep it in the fridge and shake it up before using.
