We went to a potluck this weekend, and brought the quintessential picnic dish: Potato Salad using Z&B Green Zing! The Zing! and lemon juice really made the flavors pop and contrasted well with the creaminess in the dressing. And roasting the potatoes—instead of boiling them—created great flavor and texture.
It’s also very leftover-friendly if you have potatoes you’ve already roasted, or have other veggies you’d like to mix and match! Also, if you’ve already made the Green Zing! Sour Cream from the Z&B ‘zine, you can use 1 ½ batches of that as the dressing here. Easy peasy!

Pro tip: if you combine when the potatoes are still hot, they absorb more of the flavors of the dressing!
