Curry-Roasted Sweet Potatoes and Chickpeas:
It’s awesome on top of a green salad, as a side dish, or on its own! I’d say it makes 2-4 servings, depending on how you use it.
Want to mix things up? Try swapping out the Curry Powder for Garam Masala, add in a sliced onion before roasting, or switch up your vegetables. Cauliflower, potatoes, carrots, and winter squash come to mind!
